Nutrition touches so many areas of the world that it never ceases to fascinate me and I am confidant you will enjoy this course. As a bit of background about me, I grew up in a small town in Illinois but have lived in Arizona, Pennsylvania and Iowa. I started my college career believing I would be a high school chemistry teacher. I was captivated in my first high school chemistry course to learn everything in the universe was made from the same basic materials, i.e. protons, neutrons, electrons, etc. But as frequently happens, goals changed and I have ended up teaching nutrition at Iowa State University. There is a lot of chemistry in nutrition, so I guess I did not end up too far afield.

Before coming to Iowa State University, I taught at Scottsdale Community College in Scottsdale, Arizona, Arizona State University, and most recently The Pennsylvania State University. Before entering the teaching profession, I worked as an outpatient dietitian for several years. That gave me prospective on the difficulty of changing dietary habits, but it also showed me the impact nutrition can have on the health and well-being of individuals.
